It's been a little crazy here since returning from my parents.
For starters, Baby Boo doesn't want to be put down.
Whenever we go visit family, she is treated like royalty :)...
And despite the fact that it says Princess on her birth certificate, it's taken literally at grandma's house.
But I can assure you I really don't mind. It's been 4 months since I had gotten a pedi cure, 5 months since I have gotten my hair did, and well, I am not even gonna tell you how long since I have got my eyebrows waxed. So while Baby Boo ate Blueberry muffins and stayed glued to grandma's hips, Mama got pampered.
Taking some time out for ME was definitely much needed.
I feel happier.
I feel less stresseed.
And well...I look better :)
OK, so I'm not walking around saying I'm hotter than a baked sweet potato, but I know somebody who does,...

Peanut Butter Oatmeal and Strawberry Parfait
Ingredients:
1/2 cup somewhat ground oatmeal (I grind my oatmeal so its half fine flour, and half whole oats)
1 cup non dairy milk (or more if you like your oatmeal runnier)
1 tsp. chia seeds or ground flax seeds
1-2 TB Natural Peanut Butter
1 TB Maple Syrup
1 tsp. Vanilla
1 frozen banana
1 cup sliced strawberries
Directions:
1. In a saucepan add oatmeal, milk, seeds/flax and cook over medium heat for 2-3 minutes. Then add in vanilla, syrup and PB and cook an additional 2-3 minutes. Adjust milk to desired consistency. Set aside.
2. In a food processor, blend banana to ice cream consistency. Then add in 1/2 cup strawberries, and blend until combined and creamy.
3. Layer into a large parfait glass. Start with PB, then strawberries, then banana/strawberry cream, then more strawberries, and repeat.
4. Dig in and Fall in LOVE.
Seriously..BEST BREAKFAST EVER!
I love the combo of creamy cold with a warm PB oats.
And, it's strawberry season, so the berries are big, sweet, and juicy!
And even though the weather was rainy and cold, it was a perfect breakfast. You know how you crave ice cream when it rains...
You don't do that?

Now if you will excuse me, Princess QT-Pie needs to take a beauty nap...
