I love a good quick meal that I can pull together for myself especially for lunch. Ever since all my kids started school, I can barely get a good breakfast in…if I get one…and by lunch i’m starving and have a hard time coming up with something easy and healthy to eat.

This quick and easy recipe came together all thanks to Trader Joes! It’s kind of a foodies version of Target, right? The other day I strolled around just looking for something good to make for lunch and I came across their Broccoli & Kale pizza crust and decided to try it. Obviously if you don’t have a Trader Joes you can make exchanges for certain ingredients. Here is an example:
Trader Joes Pizza Crust: Regular pizza Crust, add roasted kale and broccoli on top of the pizza.
Trader Joes Artichoke Antipasto: blend drained canned artichokes with a little EVOO and some garlic and salt.
Blueberry Goat Cheese : Regular goat cheese, could mash a little blueberries in it for fun.
Ingredients:
1 Broccoli & Kale Pizza crust from Trader Joes
1/2 cup Artichoke Antipasta Spread from Trader Joes
2 TB. Butter
1 onion, sliced
1/3 cup Blueberry Goat Cheese from Trader Joes
1 roma tomato, sliced and cut in half
sea salt and pepper
(opt: balsamic glaze)
Directions:
Heat a skillet to medium heat and melt the butter. Add the sliced onions. Continue to cook until the onions cook down, about 15-20 minutes.
While this is happening, cook pizza crust according to package directions.
Once it’s done, spread antipasto spread. Then sprinkle the onion, tomatoes, and goat cheese onto the pizza.
Place the pizza back in the oven for 5-10 minutes.
Sprinkle with a nice serving of sea salt and cracked pepper. If you are feeling fancy, drizzle with a little balsamic glaze or vinegar. Just a little though!
