Fresh Summer Green Juice

Yesterday was a BeAuTiFuL Day!

I hope everybody had a safe and fun Memorial Day weekend. I am so grateful for this country we live in and for those who have served/are serving allowing us to enjoy the blessings of our free country.

This weekend we took time to smell the roses, and others took time to eat them..

We enjoyed the outdoors and played in the grass,

And then wished we hadn’t because grass makes you itchy..

We sipped fresh sqeezed juices that made us dream of summer,

Fresh Summer Green Juice

1 large cup watermelon

1 large cucumber

2 gala apples

1/2 inch ginger piece

2-4 stalks swiss chard (preference-more if desired)

And then every morning I found joy in making Green Smoothies for willing family members we were visiting,

Pumpkiny Green Smoothie

1. C. Non Dairy Milk

1/3 C. Pumpkin Puree

1 tsp. Vanilla

2 C. Spinach

2 Dates

3 TB Oats

2 TB Chia Seeds

1 Frozen Banana

1 tsp. Pumpkin Pie Spice (or combo of cinnamon and nutmeg)

ice

I even got a little creative and added frozen carrots…

Carrot Green Smoothie

1 C. Non Dairy Milk

2 C. Spinach

3 TB oats

2 Dates

1 Frozen Banana

1/3 C. Frozen Carrots

1/3 C. Pumpkin Puree

1 tsp. Vanilla

2 TB Walnuts

1/2 tsp. Cinnamon

1/4 tsp. Nutmeg

Ice

Things may have gotten even a little out of hand when I made No Bake Energy Cookies with SwIsS ChArD in them…

But crazy is ok with me, because we couldn’t get enough of these cookies.

I even tried baking them and they turned out better than I imagined!

These cookies were so tasty and delicious, yet I am debating whether or not to post the recipe.

(Do people really want Swiss Chard Energy Cookies??)

And last but not least Baby Boo got a Pink Car from G-ma and G-pa…

(I’m a little against the whole car thing, but as long as it’s pink…. :) jk jk)

Everyone is a little nervous she is going to turn out to be a driver like her Mama…

For the most part, I would say things are looking up?

  1. Looks like such a beautiful weekend with Baby Boo and company! Love her cute pink car…too cute :) And I would totally love a swiss chard energy cookie recipe . . . I actually just bought some swiss chard tonight…yes Whole Foods was open, thank goodness because we had no food! :)

    Carrots are one of my fav items to use as a sweetener. Love them in smoothies, oatmeal, sauces, CAKES… anything! Chard cookies sound too cool to pass up – of course we want to see the recipe!!

    The cookies look really good - and if they taste good, it's all the more awesome that there's swiss chard in them! Would love to see the recipe :] I made cookies/bars with an unsuspected ingredient the other day, too!

  8. Aw, the pictures of your daughter are always so good :D Love them all. And I looooove the car. We never got anything like that, but there’s this little car at this place we go to play some times and my kids fight over it. It’s a one kid car but they’re both still fairly small so they both cram into it, haha.

    Oh, and I’m totally curious about the cookie recipe. I can sometimes stomach swiss chard on it’s own.. but in a cookie?? Oh my, that could be awesome :D

      I never did! What a slacker I am right? I remember when I made them they were good, but after a day or two they were nasty, so I think that’s why I opted out! Sorry my dear! I need to make them again so they taste good!
