Grain Free Peanut Butter Cookies & Why I LOVE Coconut Flour

Sometimes I want a particular thing, and I want it a certain way.

And despite what my husband might say, that doesn’t happen on a regular basis. Every other day at the most. And usually always on weekends…

Like, why does every basketball game on TV HAVE to air the same time Real Housewives/Bachelorette is on? (Not to mention there is like 4 games at the same time…) Or why can’t I just walk into a clothing store and find and item of clothing where my bum cheeks aren’t hanging out?

Also, why is it bathing suit season? I just need like 1 more year and then I might be ready…

You see, I really wanted to make a peanut butter cookie out of Coconut Flour, just like I made thisΒ Single Serving Chocolate Chip Cookie. I didn’t want to add any dry sugar and I wanted it to be super easy. I searched a lot of recipes, and then somehow I eventually ended up looking at these amazingly delicious lookingΒ Snicker Cupcakes. I almost said screw it.

I almost made cupcakes.

But then I remembered that if I made cupcakes those super short shorts wouldn’t fit, and bathing suit season would need to be put off for at least another 3 years…

And I live in Vegas where it’s 102 degrees this week and people live in their bathing suits, so obviously cupcakes weren’t an option. (And turning on the oven for cookies really isn’t either…) But for the sake of this blog post and those reading it, I made the cookies.

I ate 5 of them.

And I’m wearing my bathing suit. With Booty Shorts. And an oversized robe to cover it all up.

I love these cookies because you can either roll them up or flatten them out a little!

    Hi! I’m new to eating all natural/super healthy/husband now calls me a hippie bc I blend up veggies for meals πŸ™‚ and I LOVE your website! I’ve done multiple of your smoothies and am spreading the word! I’ve also done some of your other recipes and all have been big hits…even with the name calling hubs. These cookies came out pretty dry for me…is that to be expected? Did I goof somewhere? I was gonna take them to church meeting tomorrow and I’m not sure it would turn people on the the health kick …even though I’ll enjoy and force the hub to partake πŸ™‚

    • Haha your husband and my husband would be best friends :-)! And coconut flour is a SUPER absorbant flour, and it soaks up liquid more than other flours. So they texture of things made with coconut flour is alot more different than others. But if they were too dry, I would suggest adding more liquid or maybe a little coconut oil to balance out the dryness. Sorry that they were too dry! If you want to turn people on a healthy kick I would suggest these cookies, everyone love them:

        Thanks so much! I may have already made the pb pong balls…three times πŸ™‚ obsessed, and the man can NOT get enough of them! Oxygen, wate and pb pong balls are his necessities! I’ll definitely give the other recipe a try and hope for another home run. Oh, and I never had a beet ’til the red velvet smoothie and needless to say, obsessed!

  8. Does the recipe read 9 to 10 Tbsp. of non-dairy milk? (Math conversion, 2T=1/8 c, so 1/2 c + 1-2T)

  9. What kind of non-dairy milk did you use? I was thinking vanilla almond milk would be good but I thought I would see why you used originally!

    I made these last night and was a bit worried because my dough was not dry at all, more like a thicker cake batter. However they tasted absolutely amazing! Thank you so much for the awesome recipe.

  12. I made these tonight and they were crumbling?! what did I do wrong??
    They didn’t seem to ‘cook’ just stiffen a bit, it was still soft but not hard enough to hold together like a cookie. I’m sure *I* did something wrong because I read other commenters enjoyed it, it was very disappointing. My husband said they tasted like toilet paper LOL
    I liked the taste though.

      So sorry! You comment got sent to spam, so I didn’t see it until recently!
      Coconut flour is pretty finicky to work with, it absorbs water like crazy, so it won’t bake like other flours will. Also, the taste is a lot different than regular flour, and it can leave a chalky taste haha! In the recipe, I mention to add enough liquid so that it sticks together and isn’t too crumbly, which I’m thinking could have been the problem.. I’m so sorry, It makes me so sad to hear when recipes don’t turn out for others!!
