Birthday Cake Pancakes-Natural & Healthy!

This weekend I advance to big girl status and turn 25 years old…

If you would have told me 10 years ago where I would be at the age of 25 I would have definitely said, shut the front door!…”I have TWO kids?! I live in Las Vegas?? I have a food blog?? Wait I have TWO kids?!”

10 years ago I was still in high school & looking to attend the FIDM fashion college (considering I’m the least fashionable person of all…) I ate corn dogs and chipotle burritos on a weekly basis, and every time I held a baby it started to cry.

You can definitely say my life isn’t where I thought it would be, but I love exactly where I am. I’m glad the days of corn dogs and fashion school are long gone. Making pancakes coated in sprinkles with my two darling babies is a lot more fun anyways :). And plus, they don’t cry when I hold them either.(Well..most of the time!)

A big special thanks so Kodiak Cakes for sending me some samples of their Flapjack & Waffle mix so we could make some special Birthday Cake Pancakes! Every ingredient is natural, readable, and recognizable! Not to mention you just have to add water and voila, you’ve got whole wheat pancake goodness.

But since birthdays are special, we dressed up this pancake mix with some fancy add ins to make any birthday morning one to remember!

    I have a picky 4 yr old so I add smashed banana and a scoop of Cacao Green Superfood to our whole grain pancake mix. Even if you add it to something like Krusteaz mix you can feel a lot better about feeding that to your little one. ๐Ÿ˜‰

    • Banana’s and peanut butter seem to be super popular, I think it’s genius! With coconut flakes and nutmeg…now that sounds like a special treat! ๐Ÿ™‚

    I make pancakes every Saturday for my family. i love oatmeal pancakes topped with peanut butter, applesauce or plain yogurt and fruit…especially berries!

    • Mixes just make life a little easier on those busy crazy mornings! And blueberry lemon?! I have never tried that, and now i must! Sounds delicious ๐Ÿ™‚

    Happy Birthday to you! These look amazing!! I love plain old fashioned buttermilk pancakes with lots of butter & syrup on top BUT since they put me in a carb/sugar coma, these days I make gf/sf versions made with oat flour, bananas & cinnamon. But I really want to try this brand you used bc just adding water sounds perfect!

    I may be super boring……but I love plain old pancakes, nothing on them! I think it is because I have really really good memories of sneaking left over pancakes out of the fridge all day long after we made big family breakfasts!!!! No time to top them with anything, just snatch and grab carbo-amazing-ness.

  45. Those look delicious and my son’s birthday is coming up on Saturday. I like pancakes with smashed bananas or apples and cinnamon. They are sweet enough to not need syrup.

  59. If you are ever in a state where cannabis is legal, I would suggest using cannabis infused oil for a smooth earthy flavor and some pain relief ๐Ÿ™‚ this is my favorite way to make pancakes! I can only imagine that you must feel very grateful to have this breakfast instead corndogs and chipotle, neither of those sound appetizing on any regular day, let alone your birthday!     Welcome to the world of being 25! Having been 25 for a whole 6 months I can attest that it’s pretty fabulous. Pancakes are definitely an indulgence for me and when I do have them I love them with bittersweet chocolate chips and, because my mom is from Vermont, I only ever knew real maple syrup.
