4 Minute Microwave Green Breakfast Muffin

New!! If you notice, I have a new menu!! It’s a Recipe Menu! I haven’t got all of the recipes loaded up, but I figured you could check out what I have so far!

Also, there is a tutorials menu as well, for random tutorials! Check that out as well!!

*********************************************************************************************

Every morning when I wake up, the first thing I think about is food.

Actually, I lied, first it’s, “Baby Boo, why are we getting up SO flippin’ early?!!”…

And THEN I think about food.

I open the fridge.

Then I open the cupboard.

And then I become overwhelmed. There are so many options, and I want to have a little of everything. A breakfast buffet if you will.

I want toast, and eggs, and pancakes, and fresh juice, and fruit, and green drinks, and muffins, and PB, and chocolate…

“Lay off me I’m starving!!”

But, I usually, almost always have a green smoothie.

I know it’s boring, but as much as I would love to whip up my dream breakfast buffet, I have about a 5-10 minute window to make something and then be on Mommy duty. I have to save “special” breakfast for day’s like Mother’s Day and Birthdays.

I know. Lucky Right.

But sometimes there are more important things to do, like play with your daughters hair.

I know that little rat tail may mean nothing to you, but when your daughter has been bald for 11 months, this is a big deal.

I’m already thinking about curling irons, and braids, and pony’s and buns, and bows and bobby pins..

Simple pleasures, you know?

Too bad I don’t put that much effort into my hair.

Or my appearance for that matter.

See..no time for breakfast buffet!

So what’s a Starvin’ Marvin’ supposed to do when a whippity quick Green drink ain’t what you cravin’? (Where on earth did that slang come from?

5 Minute Green Muffin (Microwave)

Adapted from the ever so intelligent: Stuft Mama

Ingredients:

1 egg

2 TB Coconut Milk(or other)

1 TB. Vanilla

1 C. Spinach

1 Banana

1/3 C. Frozen Peaches

2 TB. Coconut Flour

2 TB. Coconut Finely Shredded

1 TB. Chia Seeds

2 TB. Oats

1/2 tsp. Baking Powder

Directions:

1. Easy Peasy. Blend egg, milk, spinach, peaches, and vanilla in a blender.

Make sure it’s nice and blended ๐Ÿ™‚

2. Next mix your dry ingredients in a bowl, once combined add your wet ingredients.

3. Then, take a regular coffee/cocoa mug and spray with cooking spray. Pour your batter in the mug. Make sure it’s a big enough mug.

Or, if your like me and drop it all over the floor, your mug can be teeny tiny since most of the batter is now trash ๐Ÿ™‚

4. Next step/Favorite Step. Place mug in microwave. Turn on microwave for 4 MINUTES!

5. It’s done. Plop on plate.

6. Dress it up and Make it Perty.

I topped mine with Sunflower Butter, Coconut, Raspberries, and Blueberries.

Oh..and if you have never had sunflower butter (ground sunflower seeds)..You MUST! I almost…love it..more than…Peanut Butter..

(These also make for GREAT kids breakfast/snacks as well!!)

Ok, so I may be one of the few who dreams of stuffing my face from the moment I open my eyes, but I promise you, I am doing my body a favor.

Did you know??

Eating a healthy and well balanced breakfast in the morning:

-Helps boost your metabolism, thus helping you loose your jiggly bum bum.

-Gives you the energy to start your day, avoiding fatigue-ness by lunch.

-Less likely to crave ‘unnhealthy’ foods to snack on to curb those hunger pains.

-Helps you think and focus better.

All pretty important I think.

Especially the part about fatigue-ness.

I MuSt have enough energy to keep up with this little one…

hmmm…

Is it morning yet?? I’m starving!!

Love Baby Boos hair! I remember the first time I could gather up a little hair on top of my daughters head for a pony on top of her head. I think I cried tears of joy. It was amazing. I did the same thing when we could do pig tails ๐Ÿ˜€ I know how exciting that its!

Funny you and I have the exact same two thoughts as soon as we wake up ๐Ÿ˜€

  12. Heather Alt says:

This is so yummy and my little one likes it too ๐Ÿ™‚ Have you ever done a bigger batch in the oven? I would like to make a lot in advance and freeze some.

  13. These look awesome! Just need clarification, is the vanilla in your recipe vanilla extract? Or vanilla bean? And the oats you used, are they the quick cooking oats? I am new to your site, stumbled here from Pinterest and loving what I am seeing ๐Ÿ™‚

    • great question Sarah! I should have been more clear, but it’s vanilla extract and I just used quick oats. Hope that helps and so glad to have you here! ๐Ÿ™‚

  14. I am new to your blog and I really am digging it! I made these (actually my 9 year old daughter made one, and I made my own) this morning. Absolutely love! I was wanting to get into the “green drink” phenom, but my daughter absolutely HATES cold breakfasts, so……this was the perfect solution! I plan on having lots of fun with this one and turning many green drinks into breakfast muffins. Thanks so much!

  15. Found this post via Pinterest and just had to try it out. It was so easy and yummy and filling! AND it’s a big meal for only 6 Weight Watchers points (if you’re into that). Anyways, so glad to have found this blog.

  16. What kind of blender is this? It looks so handy!! ๐Ÿ™‚
I have a vitamix would that work?

    I love your blog!!!!

  17. 4 min wasn’t long enough in my microwave, so I upped it to 5 ๐Ÿ™‚

  18. I made this today..I loved this!!!!!!!!

  19. I don’t have a microwave. Can this bake in the oven? If so, how long at what temp? Thanks.

    • Hi Nadine!
I have never tried an oven, so I’m thinking it would be about the same temp and time as normal muffins being baked in the oven. So try at 350 for about 10 minutes? I’m sorry, but this is only a guess…

  20. Great idea and so pretty. What are the dark chunks in the dry bowl? Did I miss an ingredient?

  21. Mine are turning out very wet and sticky. Is this normal? I also had to go 6 minutes instead of 4.

    • They shouldn’t be wet and sticky, did it come out better after 6 minutes. Each microwave is different, so some might take longer to cook than normal

  22. I love your blog! I have been making the green muffin, it’s so good! Is this just one serving?

    • Thanks Char! It’s single serving, but it could always serve two if you dressed it up fancy with lots of fruit and a little nut butter :-)!

  23. I think you may need to add those clarifications to your recipe above. I thought you meant rolled oats and didn’t read the comments before attempting this recipe.

I used 2TB of rolled oats and my cake looks nothing like yours. It is very wet and dense. I’ve now microwaved it for six minutes and it’s still very wet. ๐Ÿ™

I’ll have to attempt again some time with instant oats.

  24. Hi!!!
I love your website and your lovely cakes ๐Ÿ™‚ I found it by chance… I’ll try this recipe today. Let’s see what will happen!!! I’m not sure about using exactly all the gradients ’cause maybe i won’t be finding some of them in the Turkish markets. But I’ll inform you about the result ๐Ÿ˜€
P.S: Your girls are lovely!!! And so you are…

  25. Could I substitute all purpose flour for coconut flour? If so, what are the modifications I would need? Also, could I sub frozen pinneapple for the frozen peaches? I want to try this a lot. It looks delicious!

    • Hi Mc!
You could sub AP flour for coconut flour, but you may have to double it since coconut flour absorbs more liquid. And you can definitely sub pineapple. There are lots of combos you could do! ๐Ÿ™‚

      • This was absolutely delicious! Hands down the best microwave cake I have ever tried, and it’s healthy to top it all off. I ate half the muffin with nut butter and apples, and I was full. Thank you SO much for this wonderful recipe. Your blog has helped me start drinking green smoothies, and believing in the yumminess of healthy foods!

  26. I absolutely love this! After trying it the first time I now make it around 3 times a week for a quick and tasty breakfast. Thanks for sharing such delicious, healthy recipes. ๐Ÿ™‚
