Dear Baby Boo,
Despite your face in this picture..
I know you love me.
Others might think your Mom is crazy but you have always stood by my side.
No matter how many times I ask you where your head is, or your pretty big eyes, or your cute tiny bum bum, you continue to humor my praises, and point away.
You allow me to drag you every which way, all over the city such as the Fair, and even the zoo..
And smile kindly as I remind you constantly to look at the darn PiNk Flamingos…
Because Pink animals are the best!!
Your also a trooper when it comes to eating.
No matter what shade of green your food is on your tray, you smile and shove that food into your precious little mouth (which by the way has 2 teeth now!!)…
And even though you have NO idea what Mama puts in your food, I can only imagine you know it’s the most pure and wholesome ingredients, because your body is a temple..And Mama wants to keep it that way.
Baby Boo Green Nuggets/Patties
*adapted from HappyHealthyMama
1 slice of natural 100% whole wheat bread
1 C. Spinach
1 large carrot
1/4 C. coconut flour
1/8 C. Grated Cheese (organic)
Seasoning preferences-I used a little bit of cumin.
1. In a food processor, add bread until bread crumbs appear. Then add spinach and carrot until finely diced and combined.
2. Stir in eggs, coconut flour, and seasoning.
3. Form into patties.
4. In a preheated 350 degree oven, bake patties for 15-20 minutes, flipping halfway through.
And while you much away on those nuggets Baby Boo…

Sweet Potato and Black Bean Burger Patties
*This recipe was adapted from the ever so amazing Mama Pea from Peas and ThankYou.
Her recipe used yukon potatoes, but I didn’t have any so I subbed 2 Medium sweet potatoes.
Then I subbed black beans for the navy beans.
And 1 bunch cilantro for basil.
I also threw in about 1 tsp. of cumin an salt and pepper, along with her additional ingredients.*
Of coarse this meal wouldn’t be complete without…
Crispy Broccoli Bites
1 bunch broccoli, stems cut off
1/3-1/2 C. Vegan Parmesan Recipe (1/8 C. Pumpkin Seeds + 1/8 C. Cashews + 1/4 C. Nutritional Yeast-blended to fine powder)
4-5 Tb. Olive Oil
1.Preheat oven to 350. Toss broccoli with rest of ingredients, and spread out onto baking sheet covered with mat or parch. paper.
2. Bake for 30 minutes, or until crispy.
3. Once done, top with favorite toppings, and dig in.
A perfect meal for, let’s say, July 4th!
